INGREDIENTS
1/2 cup butter- room temperature
1 cup sugar
4 egg yolks
1 cup whipping cream
1 Tablespoon cornstarch
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
Meringue (4 egg whites, 1/8 teaspoon cream of tartar, 1/2 cup sugar)
1 9-inch unbaked pie shell
INSTRUCTIONS
Preheat oven to 350ºF. Cream butter and sugar well. Add in egg yolks, whipping
cream, cornstarch, cinnamon and nutmeg. Blend well and pour into unbaked pie
shell. Bake until a knife comes out clean when inserted into pie (about 45-50
minutes). Prepare meringue by beating egg whites with cream of tartar until
foamy, then slowly adding sugar, beat until whites form stiff peaks. Spread over
cooked filling to pie crust edge. Brown slowly in moderate oven for about 10
minutes.
